Adventures in Cooking This Week and My First Fishing Tournament

Well first, I must apologize to Hayley. She went to the store to get some frosting and muffin cups so she could make cupcakes for her coworker's birthday. She goes to mix the batter and realizes that I had hard-boiled every egg in the house. Oops. I wanted them for spinach salads. She calls me at work and asks if there is anything you can use to substitute for eggs. I do a Google and not anything I keep at the house....TOFU? Really?

Anyway, she had to go back to the store and I know she was in a hurry because she had to go to work. What can I say.....Sorry Dear.

So I made some Asian Slimming Soup this week. I didn't have the cabbage so I just added lettuce. Don't do that. It makes a mess. Every time you take a spoon of soup, a big piece of stringy lettuce will drip all over your face. Other than that, the soup was okay.

I found a recipe to try this week for peppered roast beef with a horseradish sauce. Well, I accidentally bought pot roast and not roast beef. Crud. So now I have a pot roast with carrots and potatoes in the crock pot, but by goodness, I still made my horseradish sauce and it is yummy. Here's what I used:
  • Sour cream
  • Horseradish
  • Lime juice
  • Tiny bit of mustard
Anyway, it's good on my finger, so I know it'll be great on my pot roast this evening.

So the weather is going to be great in Texas this weekend. So the boyfriend who is a bass fisherman (he's won money doing this), signed us up for a tournament. This is a small tournament, so I won't be winning any new bass boats or pick up trucks. Whatever. He better give me some good bait.

He always uses different bait than me and he seems to catch more fish. WTH? Last week, he put a white pom pom thing on my line and he had a rubber worm. Really? I think I was duped. But this is for money, so hopefully, he'll fix me up right.

A few things to add

My daughter was employee of the quarter at her job at TJ Maxx. She will be there a year in December. Congratulations honey to sticking it out with an annoying retail job.

Almost had a heart attack Tuesday morning. My ex took the dogs when we divorced because my old German Shepherd, Roxanne, is very attached to my exe's young dog. Well he called me Tuesday  morning to let me know she got hit by a speeding mini-van driver.

A long, horrible story involving a neighbor screaming bloody murder, another neighbor capturing the dog, lots of lying in the street moaning.....Long story short....He took her to the vet and she has no broken bones. She went to a doggie hospital over night hooked on an IV and Tuesday morning, she was fine. He said she even had pep in her step. Whew.

The house complete re-do is finished

Here is a link to my new digs. This links shows the before and after pics.

I had a somewhat rough weekend. I rented a U-haul van to move some of my son's things into storage. There were no radio controls on the steering wheel. I'm driving a huge cargo van and I had to physically REACH over to the radio knob to turn up the volume. Well also add to the day, that we moved furniture all day, tore down a storage shed in my backyard, and shoveled a bunch of dirt to try and even out the backyard a little bit.

The boyfriend wanted to know if I wanted to come over that night....Hahaha. No. I couldn't get off the couch or get my feet out of the huge tub of hot water they were soaking in.Then to top it all off, I'm soaking my feet and I needed a wine refill.

There is a new driver in town

and its not in my golf bag.
My daughter and I waited outside in line at the Denton DPS this morning for 30 minutes. It was 28 degrees. This is Texas...wth? My nose was numb.

If you  live in Frisco, just be careful. There is a new inexperienced, yet licensed driver in town.

My soon-to-be-ex called to talk about the final divorce decree. Let's just say it was not pleasant. I ended up just asking him to send it to my attorney.  Shoot that's why we pay them so we don't have to deal with the other party in such emotional circumstances. I've felt like crying most of the day, but I need to buck it up and move on. I need to NOT let that man have this much control over how I feel.

Today is Ryan's birthday so Hayley and I are looking forward to taking him out to dinner.

A lot of stuff all at once...not counting Xmas looming near

So my daughter just turned 16. She got a job at TJ Maxx. She went to work on Thursday. They told her she gets a 10% discount, but that this past weekend she would get a 20% discount.

So the next thing out of her mouth "Mom, if you take me to TJ Maxx this weekend, I'll pay you back". So anyway, she shopped. I met her manager and some of her coworkers. They were all super nice and upbeat....surprising since it was late in the day and that store was PACKED. Troubling economy? Where? Not in Frisco.
So tonight is her first real day on the job...where she'll really 'work' and not watch movies about theft, and how to earn $350 by ratting out her coworkers.

Tomorrow I'm taking off so I can take my daughter to attempt her driving test again. The parallel parking thing didn't work out last time, which we all now how important that is...NOT.

Unfortunately in Texas, this is an all day process. You show up at DMV BEFORE they open. No  kidding. Someone walks outside and gives you an appt slip and you have to come back later for your test. Last week, I was there at 7:15am and there were 50 people in line...fortunately they didn't all need drivers' tests, so we were able to get a 3pm appt. Her driving test lasted all of 1.5 minutes.  She backed in to a pole and that was it.

After all of that tomorrow, we will drive another 30 miles away to take my son out for this birthday.

Oh and then next week...drumroll... please. Let's see if all this really happens. Technically I could be divorced on Monday (but I still haven't seen the final decree) and then I could close on the sale of my house on Wednesday.

Some days I envy the people who have really boring lives. However, I'm having a great day and feeling upbeat.

NFLX is up $7 today...which is good because I bought some more last week when the price dropped. I also had bought PAY and DECK recently which are doing well. My current dud is RVBD. I will give RVBD a few days to turn around or they are fired.

How many days in a row can a person eat turkey?

So Market Street has this promotion until Thanksgiving. You spend $100 and you get a turkey. Well there are only the three of us at home. This does NOT include the animals that would scarf down an entire turkey at one sitting. We cooked an 18-lb turkey this weekend. By the way, 18 lbs is huge.

So far we've had turkey (plain), turkey sandwiches, and turkey waldorf salad. Tonight, I'm making turkey pot pie. BTW, there is still a LOT of turkey left. I really like turkey, but for how long? I guess I'm going to find out.

We spend $100 every week on groceries, so I definitely see more turkeys in our future. If we don't cook one every week, I'm not sure our freezers can take it. The outside freezer still has venison from last year and all the steaks that we get on sale. Also, we are supposed to be getting some 'birds' that a friend's wife is tired of storing in her freezer. We may have to pass on that.

I even threw out some old cherry ice cream that no one ate. I wish I could remember who bought the stupid cherry ice cream. I know it wasn't me....at least I THINK it wasn't me. I eat Haagen Daaz 'Chocolate Chocolate Chip'. We have NEVER thrown out leftover Haagen Daaz......or wine for that matter. Who knows, it was probably a year old and I can barely remember yesterday. BTW, Billie Jean, our cat (named in memory of Michael Jackson), likes cherry ice cream. I had it melting in the kitchen sink which is where I found her staked out.

Anyway, peace!

A great weekend in Texas

Well what a beautiful weekend in Texas. For starters, my daughter's Halloween costume was not revealing or trampy looking. Yea. I was worried because the fairy skirt was short, but she had on some leggings so it all turned out well. She looked really cute.

We had a lot of tricker or treaters. Mike bought about 8 bags of candy...I'm guessing so we'd have leftovers, but that didn't happen. The doorbell kept ringing with huge crowds of kids. I don't remember so many last year.

I got stingy as the night wore on and my supply started dwindling. Three pieces per person max, one chocolate bar and two 'not-chocolate' candies. Some of the kids would let you put candy in their sack and then they wouldn't leave. I did NOT fall for it and add more candy, no siree. I just let them stand there until their parents drug them off my porch or they got bored. :) And of course we had the kid that was wearing a sheet with two eye holes. I'm guessing he was probably 17.

Okay, what a great day at Cowboy Stadium. We got there early and cooked up breakfast tacos with our tailgating buddies. Nothing like a huge win on a gorgeous day. Our buddy with the 'nice' grill got a hole in his hose and we had nothing there we could use to fix it. It's amazing how you can make do in trying situations. We cooked up breakfast for 10 people on a $10 table-top gas grill that we almost left at home.

Not sure why Jerry didn't open the lid on the stadium yesterday....maybe because the crybaby Falcons moaned about the sun in their eyes last week????
